The eSIM is not tied to one operator. It may register on Vodafone Ireland, on Three (H3G Ireland) and on eir (Meteor Mobile Ireland), and it takes whichever comes in strongest where you are standing. If it loses that network on the way it can move to another one in the background. There is no APN to type in anywhere. If nothing connects at all, turn off automatic network selection in your settings, pick a network by hand, then switch back to automatic.

What roaming on your own contract costs in Ireland
Most people flying into Dublin from far away — the United States, Canada, Australia, the Gulf, Brazil, Japan — pay their home operator a daily flat rate for every day the phone is switched on abroad. Per day, per device, and a ten-day round trip adds up quietly in the background. That is by far the most common reason someone goes looking for a prepaid eSIM for Ireland.

Northern Ireland is not included — and you will not see the border

There is no checkpoint, no sign and no barrier between the two: you drive north from Dublin on the M1 and notice nothing at all, but your phone does.
If your route touches both, plan for it — either a second eSIM for the UK or a Europe eSIM that covers both. Keep it in mind for Donegal too: the fastest road there runs through Northern Ireland for part of the way without you noticing.
