There is nothing to set up for this. When one network gets weak, your phone moves to the other on its own. The name in your status bar tells you which one you are on — it shows the Turkish network's name, not "Simbye".
Along the coast and in the big cities — Istanbul, Antalya, Izmir, Bodrum — that gives you two networks instead of one. It helps most on trips inland, towards Cappadocia or Pamukkale: there are valleys there that only one of the two covers properly.

Why your normal contract gets expensive in Turkey
Turkey is not in the EU. The rules that let your phone contract simply keep working in Spain or Greece stop at the Turkish border.
Depending on your provider you then pay a daily fee or per megabyte — a week of navigating and uploading photos can end up costing more than the flight. The eSIM closes exactly that gap: a fixed amount, a fixed allowance, paid in advance.
