There is nothing to choose. The line comes from Orange Worldwide, and once you have landed and data roaming is switched on for this line, it registers as a guest on one of the country's three networks — Turkcell, Vodafone or Türk Telekom. Which one you get is decided by your phone based on signal strength. You never type in any settings, and you cannot pin the line to a particular operator.
If it refuses to connect somewhere, one of three things almost always fixes it: check that data roaming is really on for this line, toggle airplane mode off and on, or switch network selection from automatic to manual once and tap a network from the list. In basement restaurants, deep inside the Grand Bazaar and in Cappadocia's underground cities there is simply no signal — that is normal, not a fault. Northern Cyprus is treated separately from Turkey by the operators, so do not rely on this eSIM there.

It thins out where almost nobody lives. In the Taurus mountains behind the coast, in the Kaçkar range above the Black Sea, on lonely stretches of the Lycian Way between the coves and across the highlands of eastern Anatolia the signal can drop out — and which operator still delivers something there is decided by your phone, not by you. You have no signal at all in Cappadocia's underground cities such as Derinkuyu and Kaymaklı. In the Grand Bazaar and on the metro at rush hour there is a network, but it is shared by an awful lot of people. Download your maps, tickets and translations in advance.
